Fiore & Oyster Bar Manager - Fine Dining | Harrah's Entertainment | Valley Center, CA
Job Summary:
Manages the front of the house operations for Harrah's
Rincon Casino and Resort's premiere Steakhouse and Oyster Bar
restaurants.
Qualifications:
- Bachelor Degree in hotel/restaurant management preferred.
- Associate Degree in hotel/restaurant management. Graduation from
post-high school tow-year culinary arts school, or equivalent training
in food and beverage field substituted on a year-to-year basis required.
- Five to ten years of restaurant industry work, including two years in
food preparation/service and three years in supervision.
Essential Job Functions:
- Manages the day-to-day front of the house operations of the Steakhouse
and Oyster Bar, in accordance with established policies and procedures.
- Establishes and administers training programs for the restaurant.
- Counsels, guides and instructs assigned personnel in the proper
performance of their duties.
- Directs the development and administration of controls for all phases
of the restaurant in an economical and profitable manner, while
maintaining established standards.
- Coordinates the maintenance and development of methods for quality
preparation of food and monitors appearance of food served; assists in
the maintenance and development of procedures for food service and menu
items for maximum customer satisfaction.
- Manages the annual budget.
- Submits proposals for capital expense projects and manages cost of
approved projects to completion.
- Maintains an efficient program of scheduling to insure a high standard
of food preparation and service with the use of minimum man-hours.
- Instructs assigned personnel regarding safety policies and procedures.
- Assures that any hazards within the restaurant are eliminated.
- Prepares and presents periodical performance reviews for assigned
personnel.
- Recommends changes including hiring, promotion, demotion and
termination of assigned employees.
- Recommends wage and salary adjustments for personnel within Wage and
Salary Guidelines.
Physical, Mental & Environmental Demands:
- Physically mobile with reasonable accommodations.
- Must be able to lift and carry upwards to 5 pounds.
- Must be able to bend, reach, kneel, twist and grip items while working
at assigned desk area.
- Manual dexterity and coordination to operate office equipment,
including 10 key adding machines, personal computers, fax machines, and
photo copiers.
- Read, write, speak, and understand English. Operate in mentally and
physically stressful situations.
- Respond to visual and aural cues
